MY BOYFRIEND, Jonathan, had surprised me with a trip to Iceland in January 2019 for my 23rd birthday - and I was buzzing with excitement on the plane. I'd always longed to see the Northern Lights and swim in the Blue Lagoon, with its warm water like a natural spa, and now my dream was about to come true.
